You see food trucks everywhere these days, but it wasn’t that long ago that they were a rare sight. In fact, they were hard to find anywhere in Minnesota until 2010. That was the year Minneapolis tested the waters by issuing 10 food truck licenses.

Rochester’s own food truck scene has been thriving for years, and now, another tasty new option is officially rolling into town.

The Spud Truck is teasing its debut in the Med City on Facebook.

Serving up GIANT loaded baked potatoes with big flavor and fresh toppings. From classic favorites to fully loaded creations, we’re bringing comfort food straight to you.

The Spud Hud is putting a massive, comfort-food spin on the baked potato with some of our favorite toppings.Their menu includes the Buffalo Mac Spud, a Street Corn Spud, the Classic Chili Cheese Baked Potato, and a BBQ Pulled Pork Spud.

If you prefer the truck has a "build your own" option that allows you to customize your spud from scratch. You can stack your potato with proteins like chicken, bacon, or even a pork chop, then pile on toppings like onions, corn, chives, pickles, and plenty of cheese. Top it all off with your choice of cheddar cheese sauce, sour cream, ranch, BBQ, or buffalo sauce.

I love loaded baked potatoes and can't wait to give this place a try. No opening date or location has been announced yet. For updates, you're invited to follow the food truck on Facebook.
