The Minnesota State Fair draws over 2 million people annually. People come to see agricultural exhibits and animals, enjoy music and entertainment, experience attractions and rides, and most importantly, eat.
For many, food is the main event at the Great Minnesota Get-Together. There are over 500 options available, many of them served on a stick. And, each year, brand-new foods and drinks are introduced.

5 New Pickle-Flavored Foods to Try at the Minnesota State Fair
The Minnesota State Fair runs August 27 through Labor Day, September 7, 2026. If pickles are your jam, you're in luck: five new pickle-infused treats and drinks are joining the lineup this year.

1. Pickle Pie at LuLu's Public House: LuLu's Public House is serving up a pie crust filled with a creamy blend of chopped pickles, pickle juice, and cream cheese. It’s topped with a frosting made from ranch and Cholula Hot Sauce. It’s the ultimate combination of creamy, tangy, and spicy.
2. Pickle & Vine Sparkling Wine at The Hideaway Speakeasy:
A sparkling wine made in Cannon Falls by Cannon River Winery. It’s a sophisticated, bubbly toast for wine lovers who want a briny twist.
3. Pickle Lemonade at Shanghai Henri's: This alcoholic drink is made in Duluth by Duluth Cider. It's a semi-sweet hard cider pairing tangy pickle with sweet, citrusy lemonade.
4. Dill With It Cookie at Holman's Table: This cookie is loaded with white chocolate chips and finely chopped dill pickles. It’s finished off with a sprinkle of sugar and sea salt for a sweet, briny bite.

5. Dill Pickle Seltzer at Swine & Spuds: Brewed in Hastings by Spiral Brewery, this bubbly dill pickle seltzer comes rimmed with tangy pickle salt and garnished with a savory cheese cube and meat stick.
